If you are thinking about what will you get for dinner, a pizza or some fast food like fish and chips, you probably should try pasta. Some olive oil, garlic, and ingredients below can make you feel like a chef. So, here is a simple pasta recipe for dinner I got for you!

Don’t confuse simple with boring; while this is quick and easy. It is all extremely slurp-worthy, and you’ll find them on the menu of trattorias throughout Italy.

It was penned in my barely visible handwriting on a scrap of paper and taped to my fridge, along with my “go-to marinades“.This post looks much better typed out!

Ultimate spaghetti carbonara recipe

100g pancetta

50g pecorino cheese

50g parmesan

3 large eggs

350g spaghetti

2 plump garlic cloves, peeled and left whole

50g unsalted butter

sea salt and freshly ground black pepper

Bring a big pot of water to a boil.

Finely cut the 100g pancetta, removing any rind first. Finely shred 50g pecorino cheese and 50g parmesan and combine.

In a medium mixing bowl, whisk together three big eggs and season with freshly grated black pepper. Set aside everything.

Add 1 teaspoon salt to the boiling water, then add 350g spaghetti and cook at a steady simmer, covered, for 10 minutes, or until al dente (just cooked).

Squash 2 peeled plump garlic bulbs with a knife blade to bruise them.

Fry the pancetta with the garlic while the pasta cooks. Place 50g unsalted butter in a large frying pan or wok and, once melted, add the pancetta and garlic.

Cook for about 5 minutes, stirring often until the pancetta is brown and crisp. Because the garlic has now imparted its flavor, remove it with a slotted spoon and discard.

Combine the majority of the cheese with the eggs, reserving a tiny quantity for subsequent sprinkling.

Remove the pan with the spaghetti and pancetta from the heat. Pour in the eggs and cheese rapidly. Lift the spaghetti with tongs or a long fork so it readily combines with the egg mixture, which thickens but does not scramble, and everything is covered.

To keep it saucy, add more pasta cooking water (several tablespoons should do it). You only want it damp, not wet. If necessary, season with salt.

Twist the spaghetti onto the serving dish or bowl with a long-pronged fork. Serve immediately with a dusting of the remaining cheese and black pepper to taste. If the dish becomes too dry before serving, add little additional hot pasta water to recover the glossy sauciness.

Some tips for a good pasta

Adding oil to the water or cooked pasta to prevent sticking can cause the sauce to slip off the noodles. You’ll also wind up with oily spaghetti, which is disgusting. So, with that out of the way, here are all the dos!

Starches absorb water quickly, therefore the water should be quite hot before you begin boiling the noodles. Noodles that are introduced too soon can become sloppy and undercooked.

Stir your spaghetti as soon as you put it in the water. This keeps the pasta from sticking together or to the pot’s bottom or edges. During the cooking process, stir periodically.

Drain the pasta just enough to remove the majority of the water, but don’t let it “dry off.” The starches will firm up and the pasta will cling together as it cools.
