EASY BIRTHDAY CAKE RECIPE ANYONE CAN DO

You don’t have to add sprinkles to create a colorful rainbow effect. It will retain its delicious flavor. A wonderful buttercream icing is applied on top. It’s the ideal creamy accompaniment to the birthday cake.

How you make the cake

Step 1

Heat the oven to 350°F. 2 (8-inch) round cake pans, greased and floured

Make the Cake: With an electric mixer on medium speed, combine sugar and butter until light and fluffy. Beat in the eggs one at a time, stopping to scrape down the edges as required. Mix in the vanilla extract.

Step 3

In a medium mixing basin, combine the flour, baking powder, and salt. Alternately add flour mixture and buttermilk to butter mixture, beginning and finishing with flour mixture. After each addition, beat on low speed until thoroughly combined. Divide the batter evenly among the prepared cake pans.

Step 4

Bake for 25 to 30 minutes, or until a wooden pick inserted into the center comes out with moist crumbs. Cool in the pans for 15 minutes before inverting onto a wire rack to cool entirely, about 1 hour. (For optimal results, cover each cake layer in plastic wrap and place in the refrigerator until ready to frost.)

Make the Frosting: In a stand mixer fitted with the paddle attachment, cream butter on medium speed until pale and fluffy, about 5 minutes. While beating, scrape along the sides and bottom of the bowl twice. With the mixer on low speed, gradually add the powdered sugar, mixing until smooth, approximately 2 minutes, scraping down the sides of the bowl as required. Mix in the vanilla extract and salt. Gradually add cream to mixer on medium speed, mixing until frothy and spreadable, approximately 30 seconds. (For optimal results, whip frosting by hand for about 2 minutes with a wooden spoon to eliminate air bubbles.)

Step 6

Spread frosting between the cake layers and on top. Smooth the sides using a bench scraper. Sprinkle candy sprinkles across the top border and base of the cake.
